We can't stop progress and when it comes to feeding millions of people, compromised quality is a price we pay for quantity. I'm not diametrically opposed to Panera baguettes, for example. At times, it is convenient and decent enough. But when I get my hands on a BlueDog or Sullivan Bakery baguette the difference is clear. Same thing for good croissant-based pastries such as at Sullivan vs. mediocre croissant products---a clear difference but willing to concede when necessary. It is likely the case for bagels for those who know the difference., I read that Barry Bagels is swooping into Louisville soon. My guess is that they'll do to bagels what Panera Bread has done to baguettes, bagels, pastries, etc.---banalize the product to reach a mass audience. To be fair, I'm not familiar with their products. Panera Bread will open its ninth Louisville-area cafe tomorrow morning at 1534 Bardstown Road, in the old building known in the 1930s as the Laib Company, then a plumbing fixture store. (Editor's note: Google Maps indicates that this is the portion of the old Ear X-tacy that Seviche didn't use?, I also thought the same "How do they stay open" with such overhead and seasonal sales. I thought the Shelbyville Rd. twisters was owned or partially owned by the son of the local Panera Bread Franchise owner and that they had anticipated similar expansion with the custard concept. How much do you spend on dessert vs breakfast, lunch and dinner?, I hear you, and if any round bread with a hole in the middle that isn't a donut works as a bagel for you, more power to you.
